Eat for a fiver- Chocolate cake

A chocolaty treat!

This cake is very easy and cheap to make. Most importantly it's delicious and not too heavy.

It can be eaten with a scoop of ice cream, custard or even lightly dusted with icing sugar for decoration.

It's great for any occasion, try it for the Christmas holidays and your guests won't be able to stop themselves from going back for more. 

Ingredients 

1 3/4 cups or 196g of plain flour
1 1/2 tsp or 6ml of baking powder
3/4 tsp or 4ml of baking soda
1/2 cup or 112g of cocoa powder
1/2 tsp or 2ml of salt
2 cups or 450g of sugar
2 eggs
1 cup or 50 ml of milk
2tsp or 10 ml of vanilla essence
1/2 cup or 125 ml of vegetable or corn oil
1 cup or 250 ml of boiling water 

Tips 

Depending on how much of a chocoholic you are, you can adjust the amount of cocoa powder and essence you add. Remember not to over power the cake with too much or it with become to bitter, because cocoa contains no sugar, the essence gives the cake a nicer taste. 

Making the cake 

1. Always pre-heat the oven before mixing the cake's ingredients, pre-heat the oven at 180 ºC or 350 ºF. 

2. Grease your 9 inch cake tin with oil and then slightly dust it with flour. 

3. In a large mixing bowl, sift the flour, baking powder, soda, cocoa, sugar and salt together and mix well. 

4. Now add the eggs, milk, oil and vanilla essence, remember you can always add a bit more essence. With an electric whisk mix the ingredients for about two minutes. By hand it will take roughly 3 to 4 minutes. 

5. The final ingredient to add is the boiling water, so the mixture will become slightly thinner. 

6. If you want to make a layer cake, roughly divide the cake mixture in half. 

7. Then pour the mixture into the pan/pans and bake for 30 to 35 minutes, check the cake by pricking the middle with a match stick or toothpick to see if the cake is dry and ready. 

8. After the cake is finished, let it cool off for a few minutes before removing it form the cake tin/pan. 

9. If you are making a layer cake, place one cake on the plate and smooth the whipped cream on top of it, now place the other cake above the cream and lightly dust icing sugar on top. 

10. Leave to cool and enjoy with cold custard, ice cream, or berries.
