Eat for a fiver- Easy Thai Green Curry
The flavours of Thai foods are tasty, but traditional recipes can be expensive and time-consuming. So, Madeleine Hamilton presents a student-friendly alternative. Although the flavour in this dish relies on a packet curry paste, it is the easiest and cheapest way to cook a tasty Thai curry. You can use coconut milk from a can for more taste and add fresh chillies for more spice, for about fifty pence more.
Easy Thai Green Curry
(serves one person)
(Some of the prices for these ingredients are based on the cost of the portion from a bulk purchase)
Ingredients:
- 1tbs oil - £1.00
- 113g boneless, skinless chicken breast,cubed - £1.20
- 1 packet Schwartz Thai Green curry paste - £0.87
- 88ml milk £0.45
- ½ cup rice £ 0.20
1 Heat oil and fry chicken for 6-7 mins, until browned.
2 In a separate saucepan, bring one cup of water to the boil. Then, add ½ cup of rice and cook for ten minutes, with the lid on.
3 In the meantime, blend packet contents into milk and into pan of chicken. Bring to the boil, stirring.
4 Simmer for five minutes then serve with cooked rice.
